Sweet Potato Pancakes with Red Bean Filling

Ingredients

  • ⅔ cup glutinous rice flour (85g)
  • 1 sweet potato (350g)
  • sweetened red bean paste
  • salt for boiling water
  • oil for shallow frying

 


Instructions

  1. Boil a large pot of water and salt it well.  
  2. Peel the sweet potato and cut into 1-inch cubes.  Add to the boiling water and cook for about 18 minutes until soft and easily pierced with a fork.  Drain and transfer to a mixing bowl.
  3. Mash the sweet potatoes then add the glutinous rice flour.  Mix with a utensil, then finish by kneading with your hands into a soft dough.
  4. Separate the dough into 7 pieces, roll into balls, then flatten.  Add a tablespoon of red bean paste in the middle of each dough, enclose it, then flatten into pancakes.
  5. Add a generous layer of oil to a pan on medium to medium high heat.  When the oil is hot enough, add the pancakes and cook on each side for 3.5 minutes, or until golden brown.  Let it cool & enjoy!
