Mayak Eggs

Description

The Korean name for mayak eggs is “mayak gyeran” (마약계란) which translates literally to “drug egg”. In other words, mayak eggs are so addicting that you’ll be left with wanting more and more!


Ingredients

Scale
  • 12 eggs
  • 3 tbsp white vinegar & salt

Marinade:

  • 1 cup soy sauce
  • 1 cup water
  • ⅓ cup sugar
  • 1 cheonyang chili pepper
  • 1 red chili pepper
  • ½ cup chopped scallions (26g)
  • 1 tbsp sesame seeds

Instructions

  1. Fill a small pot with enough water so that the eggs will be covered with at least 1 – 2 inches of water at the top.  Add the vinegar and a generous pour of salt and bring to a rapid boil.  Gently add the eggs and cook for 30 seconds, then add a lid and reduce the heat to medium low.  Set a timer and remove the eggs at 7.5 minutes for jammy soft-boiled eggs.
  2. Transfer the eggs to an ice bath and let it rest for at least 10 minutes before peeling.  Read my tips above for perfectly boiled eggs!
  3. Add all of the marinade ingredients to a large bowl and mix well until the sugar is mostly dissolved.  Place the eggs in a large container and pour the sauce on top.  Cover and let it marinate in the fridge overnight.  The longer it marinates, the more flavor will seep into the eggs!  Mix the eggs halfway through the marinading process if there are spots not covered with sauce.
  4. Serve on top of white rice and spoon extra sauce on top.  Enjoy!

Mayak eggs pair perfectly with a bowl of white rice and a sprinkle of seaweed flakes.
