These sweet potato pancakes with red bean filling are one of my favorite ways to enjoy sweet potato! The sweet potato and red bean paste strike the perfect balance to create this sweet snack.
What do sweet potato pancakes with red bean filling taste like?
Sweet potato pancakes are warm, soft and chewy. The outside has a nice crunch while the inside has a textured sweet bean paste filling. Think of the texture of mashed sweet beans. The dough has no added sugar since sweet potatoes are already sweet and it complements the sweet red bean paste perfectly.

- sweetened red bean paste
Where do I purchase sweetened red bean paste?
Sweetened red bean paste can be purchased from a Japanese or Asian market. I know many of you don’t have the luxury of being close to one, so you can also purchase this from Amazon.
I used the Morinaga Ogura An brand for this recipe and other Japanese dessert recipes, like mochi! It’s fairly affordable and comes in a large can that you can use for many different recipes.
Cooking the sweet potato
I chose to boil the sweet potatoes for this recipe, but you can also cut it up into small pieces and steam it if you’re worried about the texture being too mushy. Steaming also prevents flavor loss. I had no issues boiling it, though, and just felt this cooking method was easier for me.
Mixing the dough
Start by using a wooden masher or spoon to combine the sweet potatoes and glutinous rice flour. Add the flour gradually to prevent mess. Once most of the flour has been mixed, begin kneading the dough with your hands. This will ensure you have no lumps and give you smoother dough.
Assembling the sweet potato pancakes
Assembling the sweet potato pancakes are very easy! First, separate the dough into 7 pieces. You can use a scale to measure it if you want to be precise. Then, roll each dough into a circle. Flatten each dough round and place a tablespoon of red bean paste in the middle. Enclose the filling entirely and roll the dough in your hands again until you’ve formed a circle, then flatten it once more into a pancake. You can smooth the edges with your hands to remove any cracks.

Ingredients
- ⅔ cup glutinous rice flour (85g)
- 1 sweet potato (350g)
- sweetened red bean paste
- salt for boiling water
- oil for shallow frying
Instructions
- Boil a large pot of water and salt it well.
- Peel the sweet potato and cut into 1-inch cubes. Add to the boiling water and cook for about 18 minutes until soft and easily pierced with a fork. Drain and transfer to a mixing bowl.
- Mash the sweet potatoes then add the glutinous rice flour. Mix with a utensil, then finish by kneading with your hands into a soft dough.
- Separate the dough into 7 pieces, roll into balls, then flatten. Add a tablespoon of red bean paste in the middle of each dough, enclose it, then flatten into pancakes.
- Add a generous layer of oil to a pan on medium to medium high heat. When the oil is hot enough, add the pancakes and cook on each side for 3.5 minutes, or until golden brown. Let it cool & enjoy!
