Ramen Noodle Fried Rice

Ingredients

Scale
  • 1 packet instant ramen
  • Hot water
  • Oil
  • Leftover rice 
  • Soy sauce
  • Dark soy sauce
  • 1 egg

Garnishing ideas:

  • Scallions, cilantro, red pepper flakes, lime

Instructions

  1. Open the instant ramen package and transfer to a bowl.  I used MAMA pork flavored ramen, but any brand or flavor will work!  Add just enough hot water to almost cover the noodles – don’t add too much so it doesn’t get soggy.  Cover the bowl and let that sit until the noodles are mostly softened.
  2. Add the leftover rice to a hot pan with oil and stir fry on medium high for about 1 minute.  I used 2x the amount of rice compared to noodles, but use any ratio you prefer.  
  3. Add the seasoning mix to the pan and mix well.
  4. Then, add equal parts soy sauce and dark soy sauce.  Only add a little at a time, mixing it and taste testing until you’re happy with the flavor.  Remember that it is much easier to add more ingredients, than having to fix the dish after you’ve added too much.
  5. Continue stir-frying until the rice is crispy and well mixed. 
  6. Transfer to a serving plate and top with a sunny-side up egg.  Garnish and enjoy!
