Description
Here’s an easy recipe for corn that doesn’t waste anything! Not even the water used to boil the corn.
Ingredients

Corn Cheese
- 2 cups corn (fresh is best but you can also use frozen or canned)
- 1 tbsp butter
- 2 tbsp kewpie mayonnaise (or regular American mayo)
- 1/2 cup grated cheese (mozzarella or other melty cheese)
- Salt
- Red pepper flakes
Sweet Corn Drink
- Granulated sugar
- Milk
Instructions
- Boil the corn in a pot – let the water fill just half an inch above the corn. We’re going to save and reduce the liquid later. Fresh corn will taste the best (it’ll taste even better boiled while on the cob).
- Remove the corn and continue to boil the liquid leftover until it’s reduced. Taste test it – it’s ready when it has a strong taste of corn and does not taste watery. Let this sit in the pot while you prepare the corn cheese.
- While the corn liquid is reducing, prepare the corn cheese. Add the shredded cheese, butter and mayonnaise to the corn while it’s still hot. Mix and add the salt and red pepper flakes to taste.
- Then, top the corn with more cheese and kewpie mayo for decoration.
- Now pour the liquid we reduced earlier into a cup and add sugar and a dash of milk for creaminess.
- Serve while hot and enjoy!
Notes
The corn drink tastes best with fresh corn on the cob, but frozen or canned works too! I used frozen corn and it was delicious!
