Description
Chicken dolsot bibimbap – the ultimate Korean comfort food. This dish is served to the table sizzling hot and will be sure to satisfy all of your cravings.

Sauce
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp gochujang
- 1 tbsp sesame oil
- ½ tsp gochugaru
- 1 tsp grated ginger (4g)
Other
- cooking oil
- skin-on chicken thighs + salt & pepper
- zucchini (korean variety is highly recommended)
- splash of chicken broth
- sesame oil for dolsot
- short-grain rice (Japanese or Korean variety)
toppings: sunny-side up egg, sesame seeds, dried seaweed flakes
Instructions
- First start by preparing the sauce. Add all of the sauce ingredients, mix well and set aside.
- Next cut the zucchini into small, uniform chunks and set aside. Then pat the chicken dry with paper towels until there is no more moisture. This will ensure a nice sear. Cut the chicken thighs into even pieces so it cooks at the same time and season with salt and pepper.
- Heat a pan on medium-high to high heat, add oil then place the chicken skin-side down once the pan is hot. Don’t overcrowd the pan (to prevent steaming) and cook the majority of the way skin-side down. The skin protects the chicken and this method (cooking mainly skin-side down) will result in juicier meat. Flip to the other side and cook until browned.
- Remove chicken from the pan and add the zucchini. Stir-fry for about a minute, then add a splash of chicken broth and scrape the bottom of the pan. Continue to cook until the zucchini has a nice char and add oil if necessary to help the browning process.
- Heat the dolsot on high, then drizzle sesame oil and use a small paper towel to spread it around. Next add cooked white rice, zucchini and the chicken from earlier. Pour some or all of the sauce on top and mix well until fully combined. Keep in mind the dolsot will continue to cook off the heat. Top with a sunny-side up egg if desired & enjoy!
Notes
Make sure to use low-moisture rice in order to get it to crisp up in the dolsot.
