What is chicken dolsot bibimbap?

Bibimbap (비빔밥) is a traditional Korean rice dish. Bibim means “mixed” in Korean and “bap” refers to rice – hence mixed rice. It usually consists of warm white rice topped with sautéed vegetable and hot pepper paste on top. Moreover, it’s great for all types of diets because the protein choice is easily interchangeable.

A dolsot is a traditional Korean earthenware pot which is used to cook various hot rice dishes. It creates a layer of crispy rice on the bottom that’s akin to rice chips and is so much fun to snack on! Don’t worry if you don’t have a dolsot, though, because a cast iron pot is a great substitute. You can also use any other type of pot, but you may not get that highly sought after “crispy rice”.

Recipe tips before you begin

  • Make sure to use low-moisture white rice because it will become soggy in the pot otherwise.
  • Precook the chicken before adding it to the pot, but don’t get rid of that pan! The pan used to cook the chicken has SO much flavor which you should take advantage of. After removing the chicken, add the zucchini and stir-fry. Then, scrape up those flavor bits on the bottom of the pot (called fond) with chicken broth. Water or any other type of broth will work too, but you’ll get more flavor with a delicious broth.
  • Drizzle sesame oil in the dolsot (or cast iron) and use a small piece of paper towel to spread it around. This will help crisp up the rice and add a nutty aroma.
  • Pour all of the sauce in the pot and mix, or use it as a dipping sauce for the meat – your choice.
  • Be creative! The vegetable and protein choice are easily interchangeable, so make this recipe your own.

Chicken Dolsot Bibimbap

Ingredients

Scale

Sauce

  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp gochujang
  • 1 tbsp sesame oil
  • ½ tsp gochugaru
  • 1 tsp grated ginger (4g)

Other

  • cooking oil
  • skin-on chicken thighs + salt & pepper
  • zucchini (korean variety is highly recommended)
  • splash of chicken broth
  • sesame oil for dolsot
  • short-grain rice (Japanese or Korean variety)

toppings: sunny-side up egg, sesame seeds, dried seaweed flakes


Instructions

  1. First start by preparing the sauce.  Add all of the sauce ingredients, mix well and set aside.
  2. Next cut the zucchini into small, uniform chunks and set aside.  Then pat the chicken dry with paper towels until there is no more moisture.  This will ensure a nice sear.  Cut the chicken thighs into even pieces so it cooks at the same time and season with salt and pepper.
  3. Heat a pan on medium-high to high heat, add oil then place the chicken skin-side down once the pan is hot.  Don’t overcrowd the pan (to prevent steaming) and cook the majority of the way skin-side down.  The skin protects the chicken and this method (cooking mainly skin-side down) will result in juicier meat.  Flip to the other side and cook until browned.
  4. Remove chicken from the pan and add the zucchini.  Stir-fry for about a minute, then add a splash of chicken broth and scrape the bottom of the pan.  Continue to cook until the zucchini has a nice char and add oil if necessary to help the browning process.
  5. Heat the dolsot on high, then drizzle sesame oil and use a small paper towel to spread it around.  Next add cooked white rice, zucchini and the chicken from earlier.  Pour some or all of the sauce on top and mix well until fully combined.  Keep in mind the dolsot will continue to cook off the heat.  Top with a sunny-side up egg if desired & enjoy!

Notes

Make sure to use low-moisture rice in order to get it to crisp up in the dolsot.
